CATERING

The Alajmo group manages ten venues, including restaurants, bars, and bistros. For the new "In.Gredienti" gourmet food market laboratory, Alajmo has relied on Gelsystem technology for the implementation of a refrigeration unit.

In the venues, two blast chillers and several refrigerated cells are active, which now, thanks to the new installation by the Viterbo-based company, operate in symbiosis. The first Gelsystem investment dates back ten years ago in Venice, at the "Gran Caffè Quadri" in Piazza San Marco, where a system was installed that - in addition to ensuring both low and normal temperatures - also manages air conditioning. Alajmo has also entrusted Gelsystem with the management of the refrigerators at the Amo restaurant located inside the fascinating "T Fondaco dei Tedeschi," also in Venice. "With Gelsystem technology, we have recovered significant workspaces and operability, and significantly reduced maintenance costs," emphasises Erminio Alajmo.


Langosteria is a reference point for dining in Milan. Enrico Buonocore is the creator of a restaurant that bases its success on selected raw materials and cooking methods, but also on ingredient preservation techniques branded by Gelsystem. The technology of the Viterbo-based company manages, with the same excellent results in terms of efficiency and energy savings, also Langosteria Bistrot, Paraggi, and Langosteria Café.


Alessandro Borghese, a well-known television presenter and an innovative and eclectic chef, opens his first restaurant in Milan, focusing on technological innovation and energy efficiency. This goal was achieved by choosing a Gelsystem unit to manage all the fridge utilities in the kitchen.

CIRFOOD is an Italian company operating in the collective and commercial catering sector. TERNI SLAUGHTERHOUSE

Technology update for livestock temperature reduction and maintenance in refrigerated cells, managed by Gelsystem Srl, greatly appreciated by Mr. Delle Monache Andrea (owner of the facility) both for the significantly different performance from the previous system and for the absorption data! We propose heat recovery for the production of hot water, completely free, suitable for managing production processes where previously energy-consuming electric resistances were used. Everything will be more efficient with significant energy savings!


FEMA (Chiusi, SI)

All single motors for the refrigeration unit application were replaced with heat recovery, used for both production processes and heating of units adjacent to the Chiusi facility. Fuel consumption, previously used for boilers, was reduced to zero, replaced by free heat recovery from the centralised motor condenser.


MINUCCI SALAMI PRODUCTION (Castelnuovo Berardenga, SI)

Revamping with the replacement of individual refrigeration units, problematic and energy-consuming! Heat recovery replaced the entire boiler for feeding post-heating batteries for meat seasoning and salting, achieving significant energy savings in fuel, excise duties, and a considerable amount of electricity. Following the results, the Minucci cousins decided to extend the application to other facilities in their possession.


TERRA DI SIENA (Poggibonsi, SI)

Replacement of intermediate fluid Chillers and related internal cell batteries (AHU) with Ecocubic with direct expansion. 250 MgW/h of electricity saved annually!! In addition to the large amount of boiler fuel defrayed for their integration with hot water, freely produced by the Gelsystem motor condenser!

TORDI BUTCHER SHOP (Bolsena, VT)

Gelsystem centralised, high-efficiency technology was adopted, with exceptional results identified in a 40% reduction in the electricity bill! The investment was repeated with new models of next-generation (Industry 4.0) motor condensers, remotely managed and controlled, with a further 20% reduction in electrical consumption.


DE AMICIS CARNI SPA (Milan)

Replacement application for the refrigeration management of all meat storage cells through our Milan dealer Bramba Frigor. Significant advantages were obtained in terms of performance, meat preservation with a significant reduction in weight loss due to meticulous humidity control. At the same time, substantial energy savings were achieved. The drivers (inverters) adopted on every mechanical part in the machine provided the opportunity to set controlled microclimates for each process, making food items much more fragrant and long-lasting in terms of preservation.


LA GRANDA - EATALY GROUP (Genola, TO)

Replacement of all 26 refrigeration units with 03 Gelsystem Green series units, previously on-off and one-to-one (unit - evaporator), significantly energy-consuming! Huge savings in electricity were recorded, in addition to the fuel for hot water production, almost deducted 100% thanks to the free cogeneration (heat recovery) process from the Gelsystem motor condensers. A substantial improvement in the conservation and seasoning of the meats stored inside the cells was noted.


ARTIGIAN CARNI (Canino, VT)

Noise emission problems? Completely solved with Slimcubic 55/110 Inverter with very high energy efficiency, compact, and extremely silent. Roberto, owner of Artigian Carni, solved the objections raised by neighbouring establishments, restoring correct noise levels, even reducing the footprint space, and, above all, electricity bills.


TOMEO SALUMI (Perito, SA)

Doubling of the facility with the addition of cells for seasoning and processing rooms, all powered by new hot GAS technology for humidity management and maturation cycles.

GreenCubic (power of about 40hp on 04 compressors) presents cogenerative heat recovery for various processes, achieving significant savings on electricity and fuel consumption. Today, the same bills are maintained as with the old structural layout, precisely half!

The Complex is in remote management and adheres to the Industry 4.0 prerogatives.

Moro Dairy requested an analysis of data with benchmarking of energy consumption. An Ecocubic 0-1200 Inverter Technology with very high energy efficiency, with a power of 80 Hp, was installed and compared with an ON-OFF 80 Hp central technology from the competition.

PASTRY

For four years, De Riso's creations, known and appreciated worldwide, have been jealously (and deliciously) stored in the safe cold of Gelsystem. A precious ally for sweets that have become symbols of Campania pastry. The positive experience of Minori, where a single control unit is active and operational for all refrigerators, has been replicated in Tramonti, where there are 20 motors (each with a power of 10 horsepower) that power all the refrigerators in the venue. Also, in the main house of the Amalfi Coast pastry, Gelsystem control units will be activated. "The systems are reliable and precise," says Sal De Riso - thanks to remote management, in case of need, technical support is always ready to solve any problems quickly. Gelsystem technology also guarantees significant energy savings.


"With the new Gelsystem refrigeration unit, we have solved all the problems resulting from the use of individual motors and made an important leap in quality. The advantages are many, including the reduction of energy and maintenance costs." Luigi Biasetto's story is made of passion for pastry and the search for absolute harmony, like that of the homonymous Biasetto pastry shop in Padua, which is part of the prestigious Relais Desserts Association that gathers excellences in high pastry and chocolate in the world.

"The Gelsystem plant - specifies - has allowed us to optimize our organization both in terms of space and the functionality of production processes, which, thanks to centralized management, are not subject to interruptions and other problems of various kinds."


In his new venue in Noale, in the province of Venice, Stefano Zizzola chose Gelsystem for a historic pastry shop that was born at the end of the 1800s. Zizzola has always meant taste and tradition in the sign of innovation.

"With the new Gelsystem plant, we have made an important leap in quality both in terms of product quality and efficiency in the management of various production processes. The only refrigeration unit installed also significantly reduces energy costs." For the laboratory and the rooms of the new venue, Gelsystem installed a SweetCubic Refrigeration Unit, which replaces traditional motors and powers the cooling circuit of all machines, and a ClimaCubic, used to air-condition the venue and manage the microclimate of all spaces.

These are the main advantages of the Gelsystem plant installed in Verga pastry shop in Giussano, in the province of Monza Brianza. "When you have 25 refrigeration units," explains Giorgio Verga, "having a single machine that manages everything is a great convenience. ICE CREAM

In Fiordilatte Gelateria, Giancarlo Timballo chose Gelsystem and, in particular, an Ecocubic that powers utilities at both positive and negative temperatures and, at the same time, produces cold water for cooling laboratory machines along with the production of free hot water at +60°C. "We have achieved a substantial energy saving," he says.


Colalucci has relied on Gelsystem technology for about ten years, installing a machine in his Nettuno company for the complete recovery of water for cooling all company systems with glycol (a liquid that meets the anti-freezing needs of the product). The Gelsystem machine allows the production of hot water, heating, and conditioning without any waste of water, for savings of about 12 thousand euros per year.



HOTEL

The prestigious Hotel in Positano has relied on Gelsystem's innovative refrigeration for several years. Gelsystem designed and implemented the only thermodynamic complex to power 46 refrigerators, resulting in a reduction in emissions and consumption. "The systems - specifies Carlo Cinque, administrative director and problem solver of the hotel - allow the recovery of excess heat, which is used to heat part of the water used in our facility."

The brand-new SlimLevel BT/TN model, like the SlimCubic series units, is an AC Inverter electricity economiser.

This version, designed to meet the needs of spaces where it's necessary to maximise space utilisation, can be positioned under a table or fitted into a technical compartment, as it comes with a remote condenser. Designed for commercial refrigeration units at temperatures from -25°C to +15°C, it is produced in the 2 or 3 compressor version, and its very high energy efficiency ensures significant savings and very low noise.

Eco Flow

Ecoflow Inverter water economisers continuously cool the condensation water from refrigeration utilities, ensuring a 100% water saving on water consumption. The hot water exiting from laboratory utilities (batch freezers, ice cream display cabinets, pasteurisers, etc.) is instantly cooled in the Ecoflow to a temperature of 8-10°C and reintroduced into the circuit to power the same machines in operation.

This principle allows the use of water-cooled machines even in areas where water is scarce. Furthermore, water condensation has a much higher energy yield than air condensation, allowing for significant energy savings as well as optimal operation of connected utilities that always operate at a constant condensation temperature.
